"Wow this was a surprise. It has that very slight grainy texture (very slight) I remember when I'd buy a hunk of cheese to eat for/with lunch when traveling in Italy years ago. It has a mellow, nutty flavor. A cut above what I typically buy...I don't buy super-expensive cheeses so I suppose it's possible something could be found at a higher price point that's like this, but I've not encountered it in the US at this kind of price/in this kind of range where I shop.Lovely with a green apple, divine shaved thin on pasta. I was looking for excuses to use it.It is so good that I find myself eating chunks of it, and that won't do (for my eating plan/diet-I can some shaving). I literally am not going to buy it again because I like it too much and don't have enough willpower.Shaves of parma cheese have minimal impact on a lower cal diet and maximum flavor added....you have to be able to limit yourself to just shavings though.You can buy it and then make this salad:Arugula, walnuts, shaved parma, lemon -garlic homemade vinaigretteIT's phenomenal.
