"Product non-stick coating was junk. Seller shipped the item quickly. When pan arrived we noted that it had a flat spot in the center of the pan where the non-stick coating felt different. Other reviews noted this same funny spot in the center as well. Used the pan 4 times and noticed the non-stick coating had started to blister and come off in the center of the pan. Heat was never set above medium during use so that was not the issue. Contacted the seller and they issued an immediate refund, great customer service. We were so disappointed in the performance of this pan. Loved the Heavy Duty feel and quality of the metal construction but could not believe that the non-stick coating failed and came off so quickly. Something is not right in the finish and application of the non-stick for this to occur. For a commercial grade pan at this price point there shouldn't be issues like this, it should be fairly bullet proof. I cannot recommend this pan at this time. See my photos to see how the finish started coming off in the center."

We had an old "Wear Ever" 12" Fry pan from another manufacturer that I needed to replace (the aluminum was starting to show through the worn out non-stick coating) so I researched the available non-stick pans and the Vollrath came up as a well-respected pan.The coating (which I feel is the top property to get right) is awesome. You do not need to use oils to cook foods with this pan - eggs, meats, vegetables, potatoes will all cook without sticking and the mess is easy to cleanup with a little soapy water and a sponge. I do use a little butter, olive or coconut oil for flavor but I want to stress that it's not required. Heat distribution is good due to the substantial thickness of aluminum. This is a heavy duty Aluminum pan. Compared with a lot of the cheaper non-stick Aluminum pans that I've seen this one is thicker and I like that.The pan has relatively steeps sides and compared with our older pan, has a larger flat bottom surface which I find helpful.The blue silicone covering over the steel handle works well to keep the heat from your hands. It adheres well to the handle and it can be removed if needed for cleaning the handle underneath, or for when I want to pop the pan and its contents into the oven. That said, there is one flaw that this handle has with our stovetop. The handle is heavy (as it should be). But it's also long. It turns out that for our six-spoke burner covers, if I align the pan so that the bottom is centered on the burner with the handle pointing halfway between the spokes, the long heavy handle tips the pan off of the burner cover. My wife and I have to consciously make sure the handle is aligned with one of the six spokes. It's not enough of a problem for me to take away a star on the rating, but it's a property of this pan that needs to be known.I've owned the pan for four months now and it gets a fair amount of use (3 or 4 times a week for full meals). I like how it performs for a non-stick pan. And you can't beat the easy clean up. Recommended.

This is without a doubt the best nonstick skillet I've ever owned.It has a good shape, lots of capacity, and the nonstick still works very well despite almost daily use over nearly 4 years (bought on 1/5/2018). Mine has developed some very minor scoring around the top of the rim on one side, but the nonstick on the bottom has held up through a lot of cooking and multiple moves where I may or may not have wrapped it very well.If I have any mild critiques it's that the handle is relatively heavy and long so sometimes the skillet will unbalance towards it before you get food in, and the silicone on the handle tends to slip off while tossing food. These are both easy to account for so I only mention them in being thorough in this review. These critiques are nothing compared to how good the skillet is. I have zero regrets about choosing this skillet.

Got this pan after great success with the Z4010 on our radiant glass cooktop. The Z4010 had a slight dip in the middle, and when it heated, that dip flattened and worked BEAUTIFULLY on the glass cooktop.The Z4012 heats as evenly as the 10" pan, but did not have the dip, but a slight crown that increased after the first use.This would NOT have been an issue with a gas top!I contacted my vendor (RestaurantSupply.com) and they arranged to send us a Vollarath Optio N3812 AND told us to keep the Z4012 to compare the two pans. I review the N3812 elsewhere. But I can tell I WILL be using BOTH pans, depending on the cooking task.This Z4012 is about 40% lighter than the N3812. It heats notably more evenly... the aluminum is quite thick all around. The handle is VERY comfortable, especially for such a large pan.Even though this warped on me, I'm giving it 5 stars. Vollrath did not rate this for flat cooktops, so based on its great cooking characteristics and the service from Restaurant Supply, I can't ding it for the warping.This line of pans is an exceptional combination of good manufacturer AND great vendor!

Have been using Vollrath pans for years and they are by far the best frying pan I've used so far. The anti-stick coating on this particular model works great as long as you treat it with care (no metal scraping, no dishwashers, etc.) and Vollrath provides great care instructions on their website.

We use this skillet EVERY SINGLE DAY. Especially for breakfast. Does great with hash browns and eggs, though I will ALWAYS use butter or oil regardless of it being non stick. They have a good life span before teflon coating starts to come off. The pic is of new one, which I've had for several months and the well used one is approx 8 years old, also used daily, you can kind see the name on bottom of well used pan, same company!! Well worth the cost, but I still try n buy it on sale. We also hand wash all our pans
