"I purchased two. They are my first experience with carbon steel and there is something of a learning curve. The searing qualities are great. They are extremely responsive to heat, so they get hot fast, and because these have carbon instead of stainless steel handles as pictured, it's in your best interest to get silicone covers. The preseasoning works really well, and I have few concerns about maintaining the nonstick properties. My main complaint (besides the handles) is that the surface got scratched up from using a fish spatula. This shouldn't be a problem because of the effects of reasoning over time, but it was unexpected."

Light enough so it heats up fast, but heavy enough to distribute heat evenly. Long steel handle stays cool. It’s bulletproof. I’m using this on an induction cooktop, by the way. I only wash it using hot water and a scrub brush. Just sent another one to my son, who hates anything plastic.nancyil

WOW! I'm very impressed with this "used" Merten & Storck 12" Carbon Steel Frying Pan! It looks almost brand new. Washed it and waiting to put "MY" first seasoning of the pan on. Thank you so much for having just what I wanted.kathryn thewes

After using this pan for 2 months I find myself really really loving this pan! The factory pre season is excellent. I have not once washed this pan. Immediately after each use I will drain the grease, use a flat steel spatula and scrape off any crust and wipe it all out with a couple paper towels/cloth towel. It leaves a nice seasoned coating. At that point I'll let it cool and hang it back up. I have just ordered the same but in the 8" size to replace my 2 old Teflon pans. I have to say the weight of the pan is much lighter than my assortment of standard cast iron. Great product that I am most pleased with!rebecca roberts
